New opportunities

This month has been busy to say the least. I finished my second year in college and started my summer job.

I haven’t had many chances to write blog posts and I’m sorry about that, I promise that I’ll be more diligent in the future.

But I have some new things to share with you guys that have happened in the last few weeks.

Featured in a magazine!

My recipes will be featured in the next copy of a really popular magazine here in Iceland called Nýtt líf. To get an email from one of the supervisors was really exciting. I was actually on the bus home when I saw the email and I called my boyfriend immediately with the news and then my mum and then I messaged my best friend. I got really pumped and happy about all of this and when I got home I sat straight down and started coming up with new recipes to share. I made a peanut-chocolate brownie with soy cream, chili bean lettuce cups, Banana-”milk”shake and rosemary sweet potato fries. Sounds amazing, right? I’ll share the recipes as soon as the copy is out or if you live in Iceland you can just buy the copy.. I know I will! It was really stressful to get everything right and pretty before the photographer came but it all turned out pretty great.

Joining Gymnut?

This week I got an email from Kyle at Gymnut and he invited me to join the pack of great trainers at Gymnut. At the time I had no idea what gymnut was and had never heard of it. After looking into it, I decided to take the next step for my career and joined in. Here’s my gymnut page and please make your own account and help me get started and be one of my first clients! Chocolate sauce – for nicecreams, cakes and bakes!


So you want to learn how to make this super easy and quick melty chocolate sauce that will turn hard in a few seconds??

I know you do.

  • 1 tsp coconut oil
  • 2 tbsp cocoa
  • 1 tsp agave syrup
  • 1/2 tsp vanilla extract
  1. Melt your oil in the microwave, in a stove or even just let it sit in room temperature.
  2. blend everything together in a small bowl
  3. Pour over your nicecream, cake or just pour it on a baking tray and let it turn into chocolate, it’s up to you!

Raspberry sweet bites


80gr frozen raspberries

3 tbsp cocoa

2 tbsp coconut oil

2 tbsp vegan butter (can sub with normal butter)



  1. Heat the coconut oil, butter and raspberries in a pot and stir
  2. Add your raspberry mixture into a mixer (or a blender, your choice) along with the rest of the ingredients
  3. Mix
  4. smooth your fudge into a baking tray and freeze for about 1-2 hours

Simple meals: Pasta with lentil and tomato sauce

Today was a busy day, studying for finals and getting ready to head home for work this summer.

I made pasta with lentils and tomato sauce for dinner and I decided to share it, it is super simple and such a cheap thing to make. I actually calculated the expenses and it was around 450kr! (3,46 dollars/ 2,27 pounds / 3 euros) That is not much for a meal that will leave you satisfied for the day/night!


For two: (or one if you’re hungry like me)

  • 200gr of whole wheat pasta
  • One jar of pasta sauce (I used an icelandic one)
  • 100gr of red lentils (laid in water for 10 hours)
  1. Rinse the lentils with water and put them in a pot with new water and bring to boil.
  2. Boil the lintils for about 3 minutes.
  3. Boil the pasta.
  4. Rinse the lentils again and put back in the pot.
  5. Heat up your pasta sauce in the lentil pot.
  6. Bring the sauce to boil and let simmer until the pasta is ready.
  7. Rinse the pasta and mix with your sauce.
  8. Serve with basil and pepper.

Macros for the whole batch* (calculated with myfitnesspal):

Calories: 570

Carbs: 100gr

Fat: 4gr

Protein: 25gr

Fiber: 14gr

Sugar: 7gr

So as you can see this will keep you full and energized for a long time and who says vegans don’t get enough protein??

* I had two cups of pasta but you might only want one which will lower the cals to 310 etc.

Chocolate Chip Peanut-butter Blondies




Oh my god… is this heaven?

This recipe is adapted from Chocolatecoveredkatie so it is not my original idea/recipe and you should seriously check out her version!

My family ate this cake up in seconds and be careful not to taste the dough because you will probably eat it all before you know it…


1 banana (mashed)

1 cup peanut butter (natural)

1 tsp vanilla extract

1 & 1/2 tsp baking soda

1/2 tsp salt (optional, if using salted PB)

5 tbsp flour (I used fiberfin but you can use spelt, almond etc.)

2/3 cup coconut sugar (can sup with other sugars)


100gr chopped dark chocolate or chocolate chips

1-2 tbsp water (if needed, not more than that!)


Preheat oven to 180°c (350°F)

Heat the PB in a pot and mash your banana in a mixing bowl along with the vanilla

Mix the PB with the banana until it forms a cookie-dough-like batter

In another bowl mix together the dry ingredients with the chocolate chips

Add the dry mixture into the PB and stir, the dough will be quite hard to mix together so be patient

You can add in the water if needed, I only needed 1 tbsp

The batter should again be cookie-dough-like and not be thin

Press the batter into a greased pan and press in some dark chocolate squares

Bake for about 10-12 minutes

Put in the fridge for 20 minutes or longer, this is important– don’t skip it

Chia pudding: chocolate



This recipe is a really simple one. It is practically the base for every chia pudding out there so if you just want a basic chia pudding, simply skip the cocoa!


1 cup non-dairy milk

1/4 cup chia seeds

1 tbsp agave nectar/ or stevia

1-2 tbsp cocoa powder (preferably raw)


Mix all together in a jar

Close it and shake it

Put in the refrigerator for at least 4 hours or just overnight to enjoy for breakfast!

Top with more agave syrup, dark chocolate, coconut flakes, nuts, etc.

Macros: (calculated with myfitnesspal, without the toppings)

Calories: 372

Carbs: 46gr

Fat: 14gr

Protein: 16gr

Fiber: 21gr

Sugar: 23gr

Why did I go vegan?


Since I was little I always loved animals, I’ve had pets my whole life and always looked at them as one of the family. I grew up in the country so not only did I grow up in a farm but I’ve also been to many farms and seen the farm animals and how they are treated. Weirdly I never saw anything wrong with how all these chickens were crammed in tiny boxes, the calves were never by their mothers side and how the cows were constantly connected to a milking machine.

About a year ago I started having severe stomach aches that lasted for days in and out. Doctors did not know what might be wrong and just threw me all those pills in a hope it would get better. I was drinking and eating a lot of dairy, thinking it was healthy and I was also stuffing my face in chicken because hey you gotta get that protein in right?? If someone could’ve just snapped some sense in me.. It was all getting really hopeless and I would just not eat until I couldn’t take it anymore and I’d have some KFC or something of the sort just to get some calories in.

I got curious of veganism through the blogilates app since many of the girls on there were vegan and I thought their food looked yummy and they looked so strong and healthy. I watched the film Earthlings and there was no going back. I decided to go vegan. It was hard to convince my family into letting me do it at first but when they saw I was eating and that my stomach aches were almost completely gone they decided it was ok.

My family should really have a round of applause though, even though they still eat animal products they are supportive and respect my way of living and so does my boyfriend and his family. I am truly lucky to be surrounded by good and supporting people, I really am.

Believe me the road to my eating habits today was not easy and I made my mistakes of not looking at the ingredients list closely enough or not eating to much. But it was all worth it, I feel better in my own body knowing that it is not a graveyard for animals, I feel stronger and fitter than before and my conscience is clear.

I am living life in peace with the earth and the animals, cruelty free.


Sweet potato with lime-mustard dressing



This one is great as a side dish or even a main dish, just which ever floats your boat!


1/4 sweet potatoe or more

1 tsp dion mustard

1 tsp lime juice

1 tbsp soy milk



Chop up your potato and fry on a pan until soft, season with salt

Mix the remaining ingredients together in a small bowl

Put your potatoe on a dish and pour the dressing over or have it to the side

Edamame salad


This salad is super quick, easy and tasty! It’s perfect as a side or just a main dish. It is full of heart healthy greens and protein! Let’s get cooking, shall we?

Recipe for one portion:

1-2 handful of frozen edamame beans

1 handful spinach

1/4 broccoli

olive oil

Paprika spice

Chili spice

salt and pepper


Defrost the edamame in the microwave or just let sit for a while.

Fry the edamame on a pan with olive oil.

Chop the broccoli and add to the pan and let cook for about 3 minutes.

Season with chili and paprika spice.

Add in the spinach and let cook for about a minute.

Take off the pan and enjoy your salad with preferably toast on the side.

Nicecream with bananas and strawberries

Nicecream is the word that is used over vegan ice cream made from frozen bananas!

I think this one tastes like heaven and it’s also healthy and even better tasting than real ice cream!

This nicecream is delicious, soft, simple and quick.

Do I need to say more?

Nicecream er nýtt orð yfir vegan ís sem að er búinn til úr frosnum bönunum.

Mér finnst hann bragðast eins og algjört nammi en í raun er hann bráðhollur og jafnvel miklu betri á bragðið heldur en venjulegur ís!

Ísinn er bragðgóður, mjúkur, einfaldur og fljótlegur! Þarf ég að segja meira?

For two:


  • 3 chopped frozen bananas
  • 2 cups frozen strawberries
  • 1 tbsp almond milk (I used almond dream)
  • 1 tsp vanilla extract
  • 1 tsp agave syrup


  1. The bananas and the almond milk are blended, in a food processor, untill they form a white, soft ice cream.
  2. The strawberries are almost defrosted in the microwave.
  3. The strawberries, along with the rest of the ingredients, are blended into the ice cream untill well combined.
  4. The mixture is put in a bowl and either served right away or put in the freezer for about 10-30 minutes.
  5. Enjoy with a smile on your face!
